I asked her for photo's of New Zealand and she sent me a bunch of Photo's. However,these four are my absolute favorite.

Jeannette’s recipe

for Jamaican Jerk

I created this recipe from different files on Jamaican Jerk. The Common ingredients for Jamaican Jerk , Fresh Garlic, Fresh Ginger, Thyme, Cinnamon, Allspice, Bonnet Scotch pepper, and soy sauce. Some recipes used, lime juice, some used Lemon and some used distill vinegar. I also found a couple of them where they used Rum and Beer or both in the recipe.

I came up with recipe and the flavor was awesome, it gave the Ribs, and chicken a smoked flavor to the Meat. I am posting a picture of my ribs. However, I would to show you the chicken. My husband and my children ate it before I could get a photo.

So enjoy the flavor of my Version of Jamaican Jerk.

INGREDIENTS
1/2 (12 ounce) bottle lager style beer
3 fluid ounces dark rum
1/4 cup molasses
1/2+ cup packed brown sugar
1/4 cup soy sauce
½ Cup Orange Pineapple Juice
1/4 cup lime juice
2 tablespoons minced garlic
2 tablespoons minced ginger
1 scotch bonnet Chile pepper, minced
2 teaspoons chopped fresh thyme
2 teaspoons chopped fresh marjoram
1 1/2 teaspoons ground allspice {Jamaican Allspice can be purchase at Walmart}
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
2 bay leaves
kosher salt and cracked black pepper to taste

Marinate the pork, or chicken for 12 to 24 hours. Grill. Drain the marinate and place in a sauce pot and bring to a boil. Brush the meat while cooking. Keep meat in a low temp oven when ready to serve.

2 cups cooked chicken breast meat, cubed

1 cup diced celery

1/2 cup slivered almonds

1/2 teaspoon salt

1/2 teaspoon pepper

2 tablespoons fresh lemon juice

1 cup mayonnaise

1 cup grated sharp Cheddar

2/3 cup crushed potato chips
Preheat oven to 350 degrees F.

Spray a 13 by 9-inch baking dish with vegetable oil cooking spray.
In a large mixing bowl combine the chicken, celery, almonds, salt, pepper, lemon juice, mayonnaise, and cheese. Place the mixture in the prepared baking dish. Spread the crushed potato chips on top. Bake for 20 minutes, or until bubbly.

As with Cuban Bread the origin of the Cuban sandwich (sometimes called a "mixto sandwich", or "Cuban Pressed Sandwich") is somewhat murky. The sandwich became a common lunch food for workers in both the Cigar factories and sugar mills of Cuba and the cigar factories of Ybor City around 1900.

At that time, travel between Cuba and Florida was easy, and Cubans frequently sailed back and forth for employment, pleasure, and family visits. Because of this blending of culture and ideas, it’s impossible to say where the Cuban sandwich first became a common worker’s meal.By around 1910, however, workers’ cafés in both Ybor City and Cuba were serving many such sandwiches daily.

The Cuban sandwich was served in kiosks, coffee bars and casual restaurants throughout Cuba, especially in the big cities such as Havana or Santiago de Cuba. Years later, Miami also gained a resident Cuban population. By the 1960's, Cuban sandwiches were common on Miami Cafeteria and restaurant menus, and are still very popular there todayDuring the 1960's and 1970's, Puerto Rico received its own large influx of Cuban immigrants and the "Sandwich Cubano", which was already known, became a staple at the local cafeterias and lunch wagons.

Ingredients

While there is some debate as to the contents of a “true” Cuban sandwich, most are generally agreed upon. The traditional Cuban sandwich starts with Cuban bread. The loaf is sliced into lengths of 8-12 inches (20-30 cm), lightly buttered on the crust, and cut in half horizontally. A coat of yellow mustard is spread on the bread. Then roast pork, glazed ham, Swiss cheese, and thinly-sliced dill pickles are added in layers. Sometimes the pork is marinated in Mojo and slow roasted.

The main regional disagreement about the sandwich’s recipe is whether or not to include salami. In Tampa,Genoa Salami is traditionally layered in with the other meats, probably due to influence of Italiam immigrants who lived side-by-side with Cubans and Spaniards in Ybor .CityIn Miami, salami is left out.

In Key West, mayonnaise, lettuce and tomato are usually added. These additions are often available in restaurants in Tampa and Miami, but are frowned upon by traditionalists there.When assembled, the sandwich is lightly toasted in a sandwich press called a plancha, which is only somewhat similar to a panini press but without grooved surfaces. A traditional Cuban sandwich is never made with a panini grill. The plancha both heats and compresses the sandwich, which remains in the press until the bread is crispy and the cheese is melted. It is usually cut into diagonal halves before serving.

Cuban Bread Recipe
1 pkg. yeast

2 c. lukewarm water

1 1/4 tbsp. salt

1 tbsp Sugar

6-7 c. sifted flour

1. Dissolve the yeast in the water, beating it in with a wooden spoon, or use dough hooks on an electric mixer at low speed.

2. Add enough flour to make a fairly stiff dough.

3. When the dough is thoroughly mixed shape into a ball. Place in a greased bowl and grease top. Cover with towel and let stand in warm place (80-85 degrees) until double in bulk.

HINT: (In winter, put a pan of boiling water in the bottom of your oven and put bowl on rack. Close the door to help rise.)

4. Turn dough out onto lightly floured board. Shape into two long loaves. Arrange on baking sheet which have been sprinkled with corn meal. Allow to rise 5 minutes.

5. Slash the tops in 2-3 places. Brush with water and place in cold oven. Set oven to 400 degrees and place a pan of boiling water in bottom of oven. Bake 40-45 minutes until crusty.

Makes two loaves of Bread.

Cuban Sandwich Filling

1 Loaf of Cuban Bread (Substitutes: French or Italian Bread)
1 pound ham (cooked and sliced)
1 pound roasted (cooked and sliced)
1/2 pound Swiss cheese (sliced)
dill pickles (sliced)
Yellow mustard or Mayonnaise

As Pictured above, making this sandwich is easy. -------------------------------------------------------------------------------------------------Tell the person in the Deli to slice the meat Setting on 2 and cheese 1 The meat is thick for this Sandwich. Also I Love Paula Deen's however, her take on the Cuban Sandwich is wrong. Use the Cuban Bread any substitution is not a Cuban Sandwich.-------------------------------------------------------------------------------------------------

PREPARATION:
1. Preheat a griddle or frying pan on medium heat.
2. Cut the loaf of bread into quarters and slice each quarter in half lengthwise for the sandwiches.
3. Spread the mustard or mayonnaise on the bread.
4. Lightly coat the cooking surface of the griddle or frying pan with cooking spray or butter. Place one sandwich onto the hot surface.

5. Put a clean, heavy skillet on top of the sandwich to flatten it. Press the bread down to about 1/3 of its original size.

6. Leave the skillet on top of the sandwich and grill for one or two minutes. Lift the heavy skillet, turn the sandwich over and repeat this step for the other side of the sandwich.

7. The cheese should be melted and the bread golden brown. Slice each sandwich in half diagonally and serve.

Serves: Makes four sandwiches.

The proof is given in 'Brumbaugh's Revolutionary Records' of Maryland, Part 1, page 14, number 72 where he signed the Patriot's Oath of Allegiance in Washington County in 1778'' circa 1776.1284 He was signed the Patriot's Oath of Allegiance in 1778 at Washington Co, Maryland.1285 He witnessed the death of Mary Ketcham (363) on 5 Oct 1782. The Wife of Billy Joel [Mrs. Katie Lee Joel] has excellent recipe for Slow Cooker Pulled Port Barbecue.

So I decided to make the pork, so I would have it ready for lunch, I cooked the pork in the middle of the night. The smell got to my family, and they told me I made it hard for them to sleep.

It makes Twelve Servings

Total: 14 hrs

SPECIAL NOTE: Use Watkins products for best results.

2 tbsp chili powder

1 tbsp onion poswder

2 tsp salt

1 1/2 tsp garlic powder

1 tsp cayenne red pepper

Special Note: Use Kraft original BBQ sauce

2 cups of barbecue sauce

Special Note: Go to the Deli Section of your store and get the freshest soft buns you can find. I like the ones top with Onion flavor.

12 Soft Hamburger buns

Cole slaw optional--For extra crunch and great flavor use Broccoli Slaw.

Rinse pork and pat dry. In a small bowl, combine chili powder, onion powder, salt, garlic powder and cayenne pepper. Rub all sides of the meat. Most important Marinated the meat for 2 hrs or overnight.

Cook in Slower cooker for 10 hrs. After cooking drain liquid and skim fat

Shred pork with forks and return to slow cooker. Return liquid and Barbecue sauce.

On thing I am going to say this, I used the best products on the Market, for seasonings I use Watkins. Watkins can now be purchased at Walmart.

Also for the Barbecue sauce, the best use is Kraft orginal Barbecue sauce. When using Kraft orginal it gave the pork a really great flavor.

Now for my twist, everyone always use the cabbage for the Cole Slaw. So to add extra crunch I use broccoli slaw.

My husband just returned from Iraq and I always make him a really great dinner. So I chose this and he loves it.

So I have the seasoning alreay made up so I can just make the pork.

I decided to order prints online through Walgreens, I selected Walgreens out of many options. I took a picture of my husband when he returned to the United States After Serving 15 months in Iraq. He is Staff Sergeant in the military.

However, the only camera I had with me was my cell phone that I purchased through Verizonwireless. I wanted nice copies professionally done.

So from the Text part of my phone, I sent them to my Yahoo E-mail account. Then placed them in my photo section of my computer.

Then I started to look at the on-line options to print my picture from my cell phone. So I purchased 10 each of 4X6 2 each 5X7 and 2 each of 8X10's. The photos came out excellent.

I was charged 12 cents each for the 4X6's. The whole order came out $10.00. I had order them on April 25, 2008 and I had received them on April 27, 2008 by mail. That was fast service. It save time and money. Especially Gas money

What was also nice that I received a coupon for my next order $5.00 off on order of $20.00 or more. The Coupon is simple and I can used as many times until it expires on June 30, 2008.

Note the prints cost more if you pick them up at the store. They cost 19 cents a print.

Now I wish that when I take a picture from my cell phone, I can place an order from the phone. That would save time. Now a person can make bids from E-bay.

However, I like what I got from Walgreens. There are other on line services that were listed. I chose Walgreens First and I am glade I did.
